一人の夜はたいてい、行ったことのない店か、食の実験をする。
今日は行こうと思っていたtempoというお店のラストオーダーに間に合わず、八事イオンの食料品売り場をうろついていた。
ウマヅラハギが400円くらい値引きされて210円になっていたので、それとセージとオリーブオイルを買った。ウマヅラハギは初めて調理する。
帰宅してすこし塩とセージをもみこんで、スキレットに乗せてオリーブオイルをだらだら掛けてオーブンで焼いた。
下処理済だけど肝が残っていて、これがバカうまい。もちろん身も瀟洒な味でおいしい。スキレットに溜まったオリーブオイルにひたして食べた。
セージって小学生のころはただ花の蜜を吸っていただけだったけど、こんなにいい香りで食材を引き立てるなんて、初めて知った。
自分にとって調理とは食材の実験で、食の喜びとはまだ知らない味を知ることなんだと思う。
ウマヅラハギは、オーブンで170℃で30分焼いた。
